Cauliflower Pizza


I wanted to share this recipe with you all, as a healthy and beautiful meal option: Cauliflower Pizza Crust.  I made a pizza with this crust for Josh and I last week and it was so delicious.  I used beet greens and roasted peppers from the freezer and tomato sauce from my pantry so it had a touch of last year's garden as well as fresh eggs from the chickens.

Cauliflower Pizza Crust

1 head of cauliflower, broken up
1 cup of mozzarella, shredded (plus extra to top your pizza)
1/2 cup parsley or other greens, finely chopped
2 eggs, scrambled
2 teaspoons garlic, minced
salt and pepper
toppings
tomato sauce

To make the crust, break up a head of cauliflower into pieces and put in a steamer tray in a large pot.  Cover and cook about fifteen minutes or until tender.  Next, throw the cooked cauliflower into a food processor and pulse until relatively smooth.  Throw it in the fridge to cool down.  Meanwhile, preheat the oven to 450 degrees and line a baking sheet with parchment paper.  Once cool, all the remaining ingredients to the cauliflower: mozzarella, parsley or greens, egg, garlic and salt and pepper.  Spread on the prepared pan and press into shape.  Bake 15 minutes then put under the broiler until it starts to brown.  Remove and top with tomato sauce, whatever toppings you like and cheese.  I put artichoke hearts, diced red onion, roasted peppers, mozzarella, and feta cheese on ours - yum!  Put it back under the broiler to melt the cheese and serve immediately.
